Sausage Skewer with Smoked Andouille

This recipe serves 4 people and is perfect for a quick dish you can assemble, put on the grill and eat within 30 minutes.

  • 1 tray whole domestic mushrooms
  • 1 red bell pepper, cut in 1" squares
  • 1 green bell pepper, cut in 1" squares
  • 1 red onion, cut in 1" squares
  • 1 tray whole cherry tomatoes
  • 3-4 links Smoked Andouille Sausage cut in 1" pieces 
  • (or any other Chef Martin Sausage) 
  • 1/2 cup olive oil
  • 4-5 cloves fresh chopped garlic
  • 2 tbs fresh chopped oregano
  • 1 lemon, juiced
  • Salt and pepper

Soak bamboo skewers in water for 30 minutes prior to using.

In large mixing bowl combine olive oil, lemon juice, garlic, oregano, salt and pepper. 

Add all other ingredients and mix well. Assemble all items alternating on bamboo skewer, put on hot grill, brush with left over marinate and grill until vegetable caramelizes on both sides.
